Southwestern Cornbread Biscuit Bake

Ingredients

cups chopped cooked chicken breast

medium red bell pepper, seeded and chopped
1
can (15 oz) Progresso™ black beans, drained, rinsed
1
jar (12 oz) chicken gravy
1
box (9 oz) frozen corn, thawed
1
can (16.3 oz) Pillsbury™ Grands!™ Homestyle refrigerated corn biscuits
Chopped fresh cilantro, if desired

    Heat oven to 350°F. Grease 8-inch square baking dish with shortening or cooking spray.

    In large bowl, mix chicken, bell pepper, black beans, gravy and corn; mix well. Spoon into baking dish. Separate dough into 8 biscuits. Place biscuits on ungreased cookie sheet.

    Bake chicken mixture and biscuits about 15 minutes or until filling is bubbly and biscuits are baked through. Top chicken mixture with biscuits to serve. Garnish with cilantro.

  • Use shredded rotisserie chicken in place of the chopped cooked chicken breast.
