Expert Tips

  • Chipotle peppers are smoked jalapeño chiles, available dry or canned in adobo sauce. For a mild casserole without the distinctive smoky flavor of these chiles, simply omit them.
  • To reduce the fat in each serving of this recipe by about 10 grams, use light garlic and herb cheese spread in place of the regular spread.
  • Freeze remaining chipotle chiles in small, recipe-sized quantities. Place the chiles in ice cube trays until they are frozen solid, then transfer them to a resealable plastic freezer bag.
