If you’re a perfectionist about peeling hard-boiled eggs, use older eggs (closer to their expiration date), and try peeling them under water, using a spoon to ease the peel away from the egg white.
Sriracha isn't the only fun hot sauce out there. Feel free to try out Sambal Oelek or chili garlic sauce instead.
If you are serving these to a crowd, top half with the Sriracha sauce, and leave the other half plain for those guests who likes things on the mild, more traditional side.
