Keep this refreshing, easy-to-make butter on hand to spread on scones, biscuits, nut breads, pancakes, bagels and toast. It's delicious!
Sweet Raspberry Butter: Omit orange peel and juice. Beat in 1 cup raspberries, crushed, and 2 tablespoons sugar; or beat in 1/2 cup raspberry jam.
Sweet Almond Butter: Omit orange peel and juice. Beat in 2 tablespoons finely chopped almonds and 1 teaspoon almond extract.
A few tablespoons of miniature chocolate chips stirred into this fabulous butter makes an indulgent topping.
Form leftover butter into a log shape. Wrap tightly with plastic wrap and freeze. When you need a few pats of butter, simply slice off a few butter coins, and return the rest to the freezer.
