Turkey Fruit Salad with Cranberry Dressing

Ingredients

Dressing

cup cranberry juice cocktail

teaspoons cornstarch

teaspoon sugar

teaspoon Dijon mustard

ice cube

Salad

cups torn Boston lettuce
6
oz. thinly sliced deli cooked turkey breast
2
cups halved fresh strawberries
2
cups cubed cantaloupe
1/2
cup fresh raspberries

    In small saucepan, combine all dressing ingredients except ice cube; cook over medium heat until bubbly and thickened, stirring constantly. Remove from heat. Stir in ice cube until dissolved and dressing is cooled.

    Arrange lettuce evenly on 4 dinner plates. Arrange turkey, strawberries, cantaloupe and raspberries over lettuce. Drizzle dressing over salads or serve with salads.

Expert Tips

  • All salad ingredients can be combined in medium bowl. Drizzle with dressing; toss to coat.
