Vegetable Cacciatore Over Rice

This "hunter´s style" tomato sauce often is used on a chicken dish, but it also makes a tasty meatless dinner served over rice. MORE + LESS -

Ingredients

(14 1/2-oz.) can ready-to-serve vegetable broth
1 1/2
cups uncooked instant white rice
1
tablespoon olive oil
1
medium onion, chopped
2
garlic cloves, minced
1
medium green bell pepper, cut into 1-inch pieces
1
(8-oz.) pkg. (3 cups) sliced fresh mushrooms
1
(15-oz.) can Italian-style stewed tomatoes, undrained

    In medium saucepan, bring 1 1/2 cups of the broth to a boil. Add rice; return to a boil. Reduce heat to low; cover and cook 5 minutes or until all liquid is absorbed. Fluff rice with fork.

    Meanwhile, heat oil in large nonstick skillet over medium-high heat until hot. Add onion, garlic, bell pepper and mushrooms; cook 2 to 3 minutes or until onion is tender.

    Add tomatoes and remaining 1/4 cup broth. Reduce heat to medium; cook 4 to 5 minutes or until bell pepper is crisp-tender. Serve over rice.
