Whole wheat flour gives these cookies an appealing nutty flavor that's a nice foil for the lemon and sweet spices.

Ingredients

  • 1 cup sugar
  • 1/2 cup margarine or butter, softened
  • 2 tablespoons milk
  • 1 teaspoon grated lemon peel
  • 1 teaspoon vanilla
  • 1 egg
  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon

    In large bowl, combine 1 cup sugar and margarine; beat until light and fluffy. Add milk, lemon peel, vanilla and egg; blend well. Add flour, baking powder, baking soda, salt and nutmeg; mix well. Cover with plastic wrap; refrigerate 30 minutes for easier handling.

    Heat oven to 375°F. In small bowl, combine 2 tablespoons sugar and cinnamon. Shape dough into 1-inch balls; roll in sugar-cinnamon mixture. Place 2 inches apart on ungreased cookie sheets.

    Bake at 375°F. for 7 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.

    After cookies are baked and cooled, give them character with purchased frosting. Use it right from the container or try one of these quick ideas: • Colored frosting: Tint vanilla frosting with food color. • Icing Glaze: Place 1/2 cup purchased frosting in a microwave-safe bowl and microwave on HIGH for 10 to 15 seconds or until glaze is smooth; stir. Quickly spread over cookies and allow to dry. • Marbelized glaze: Spread cookies with one color of icing glaze. Quickly drizzle another color on top; marble the two colors with a toothpick. • Easy icing lines: Place 3/4 cup purchased frosting in a heavy resealable plastic bag. Snip off a tiny tip of one corner; close the top and gently squeeze the frosting through the hole to make thin lines, squiggles, etc.
