Cook cauliflowerets as desired below. Mix oil, vinegar, Italian seasoning and pepper; toss with warm floweretes. Let stand until cool.<BR><BR>
<B>To Boil</B>: Heat 1 inch water (salted if desired) to boiling in saucepan. Add floweretes. Heat to boiling; reduce heat to low. Boil gently about 10 minutes (for 2 pounds) or until crisp-tender; drain.<BR><BR>
<B>To Microwave:</B> Place floweretes in microwavable casserole. Add 1/4 cup water (for 2 pounds). Microwave on High about 12 minutes or until crisp-tender; drain.<BR><BR>
<B>To Steam: </B>Place steamer basket in 1/2 inch water in saucepan or skillet (water should not touch bottom of basket). Place floweretes in basket. Cover tightly and heat to boiling; reduce heat to low. Steam about 6 minutes (for 2 pounds) or until crisp-tender.
