Easy Peasy Marshmallow Fudge

When I was fresh out of college and in my first year as a journalist, my newspaper had a pot luck holiday party. It was long before I really knew how to cook well, but I wanted to bring something good ... something homemade and impressive. Hey, when you are 21, you are in a constant state of trying to impress ... or at least I was.

Enter fudge. I don't know what made me choose it. I'd poured over cookbooks and it sounded doable. When I made my first batch, I discovered just how easy it was too. I made three or four different kinds with different additions like marshmallows and nuts over the course of two days - and I was so proud of it.

As easy as the fudge was, I made it for the holidays for only a year or two before retiring it. I don't know why ...

This past weekend, I made the fudge again. It was everything I remembered: rich and creamy, easy as can be to make and mouthwateringly good. My kids ate piece after piece. We gave some to other family members who dropped by on Monday and they devoured it.

No matter what I can create in my kitchen, having an easy recipe like this that draws oohs and aahs is always wonderful.

I am years older and wiser than when I first made this fudge. I know that this method is not the traditional method of making it ... but I don't mind. Sometimes, shortcuts are perfectly fine when you are making something as divine as this Marshmallow Fudge
