S’mores are my all-time favorite dessert.
They’re only a few bites, perfectly balanced, interactive, and best of all – completely delicious.
I’ve tried to improve upon the classic graham, chocolate, and burnt marshmallow equation with things like peanut butter, caramel, and ice cream, but nothing beat the original.
Until now, I thought it was impossible to improve a classic s’more. That’s because until now, I had never put bacon into a s’more!
That’s right! This Bacon-Infused Marshmallow S’more finally improves upon the original! It brings a nice, salted caramel-type flavor to the table, and will really wow your friends at the next campfire.
First, cook your bacon and add it to the food processor along with some of the bacon fat.
The crumbled bacon mixed with milk and some gelatin does not look appetizing…at all! Heated sugar brought to a soft ball stage gets mixed with this and whipped to form the marshmallow.
Pour this over a powdered sugar-cornstarch mixture to prevent sticking.
When it hardens, you can cut out little cubes. You need to use plenty of the powdered sugar mixture to keep everything from sticking.
They’re pretty good as is…
…but best in a s’more! Dan Whalen will never look at a s’more the same way again. He has been blogging for over 4 years at The Food in My Beard; check Dan's Tablespoon profile often to try his recipes with creative international spins!
