10 Recipes for Rotisserie Chicken

As prepared by S Caron,

I swear, my local grocery store pipes the amazing scent of freshly cooked rotisserie chicken throughout the store. So, when you dash in for an item or two, you are just drawn to the hot food counter. And those chickens are so hard to resist.

On those nights where you have no idea what’s for dinner, rotisserie chicken can be downright impossible to turn down. But what do you do with the leftovers? Here are 10 fantastic ideas for transforming last night’s fast dinner into tonight’s speedy masterpiece.

Lunch Salad

Rotisserie chicken is perfect to slice and dice on a delicious salad for lunch. Top your favorite lettuce and veggies with it, or try this delicious recipe for Cranberry, Chicken and Goat Cheese Salad. Also delicious? Rotisserie Chicken Salad with Cherries and Gorgonzola.

Dinner Salad

Just like the lunch salad, but with a bigger portion and more toppings, a dinner salad is a fab way to use leftover rotisserie chicken. Try my crave-worth Chicken Italiano Dinner Salad recipe.

It would be an understatement to say that my family has a minor obsession with sliders. Those itty bitty sandwiches are an absolute favorite of ours, and the diminutive size is absolutely perfect for my children’s little hands. Our newest favorite recipe is Barbecue Shredded Chicken Sliders, which can be whipped up in a mere 20 minutes – including baking up the tender little Pillsbury Simply Biscuits.

Salad Sandwich

Chicken salad is a classic use for leftover chicken. Try it in a delicious sandwich like Waldorf Chicken Salad on Raisin Bread – it’s different, but sounds divine.

Fabulous Pasta

Chicken, pasta, sauce, done. It really can be that easy … or you could take a few extra minutes and make something amazing like Chicken Carbonara Deluxe.

Bake It Again!

Rotisserie chicken is ideal for quick-cooking casseroles too. Since it’s already cooked, you really only have to heat the dish to serve. Try it in Impossibly Easy Chicken Pot Pie. Or head south of the border for some yummy sounding Chicken Enchilada Casserole.

A Rice Bowl

I adore making rice bowls for easy meals, since it takes so little effort, especially if you use quick cooking rice or leftover rice. And this Super Easy Chicken Broccoli Rice Bowl is proof positive of that.

Well, this one is a natural. Cut up that leftover chicken and make a fabu pizza to enjoy. The Pesto Chicken Pizzas from Eat Better America sound ah-FREAKIN-mazing.
