Let your slow cooker do the work with this super quick and easy cheesy chicken dinner smothered in salsa.
I've got a mad crush lately on three ingredient dinners. They sound like such an impossible thing – seems like most cookbooks make meals look like a 12-ingredient list of shenanigans is required even for basic recipes. Alas.
This lil' darling takes just three ingredients: Salsa. Chicken. Cheese. We love you.
It's this easy. Guys. THIS EASY!!
Salsa in the bottom. Chicken on the top.
Salt if you want.
Cover with the crockpot lid.
About four hours later, you'll have a pot of salsafied chicken. Give it a little stir.
Then toss on cheese. Glorious cheese. Oodles of cheese. Pounds of it.
Okay, two cups.
But it's a lot.
Pop the top onto your slow cooker. Keep the top on tight, tight, tight. Then let it all get melty and schmelty and turned into gooey perfection. It'll take about an extra half-hour of cooking. Don’t lift the lid! The cheese gets meltier when all the juices get slow-cookered together.
