Burrito Summer Roll

Ingredients

  • 10 rice paper wrappers
  • 2 cups pulled pork carnitas
  • 2 cups cooked rice
  • 2 cups shredded lettuce
  • 1 can black beans
  • 1 cup thick & chunky salsa

    Toss the salsa and about 10 of the black beans into the food processor. Blend untll smooth. Set aside as dipping sauce.

    Prep all ingredients and get them ready. Place them all around a clean surface for rolling.

    Fill a shallow bowl with warm water.
  • 4
    Dip your rice paper into the water as quick as you can. Just get it in there and take it out, only leaving it in the water for about a second. It will still feel too firm, but the water will continue to soak in and the final texture will be just right.

    Place the wrapper on the rolling surface and start putting the ingredients in. Start with the rice and lettuce, then add the beans and pork.

    Wrap the paper into a nice summer roll. Repeat with the rest of the rolls.

    Serve with the dipping sauce.
