Dark Chocolate Raspberry Pie Bars

Not only are these bars rich with fudgy chocolate and tart berries that burst with flavor in your mouth but they are made with just six simple ingredients!

Ingredients

Pillsbury™ Refrigerated Pie Crust

ounces sweetened condensed milk

cups dark chocolate chips, divided
1
cup red raspberries
1
tablespoon granulated sugar
4
ounces Pillsbury™ refrigerated sugar cookie dough

Directions

  • 1 Preheat the oven to 350°F. Line a 9x13-inch baking dish with foil and spray with non-stick cooking spray.
  • 2 Unroll the pie crust and fit it in the prepared pan as best you can. Use a knife to trim the edges and fit the scraps to cover the bottom of the pan entirely with the crust.
  • 3 In a small saucepan, heat the sweetened condensed milk over medium heat. Stir in 1 cup of the chocolate chips and continue stirring until fully melted.
  • 4 Spread the melted chocolate over the prepared pie crust.
  • 5 In a small bowl, toss the raspberries with the sugar. Sprinkle the berries over the chocolate.
  • 6 Use your fingers to crumble the sugar cookie dough over the berries as evenly as possible.
  • 7 Bake for 28 minutes. Remove from the oven and sprinkle the remaining 1-cup of chocolate chips over the bars and return to the oven for 2 more minutes.
  • 8 Cool completely before serving.

These pie bars are easy to make and sinfully delicious. 

Growing up, my mama always made me a raspberry pie at Christmas. She still does, actually. Mostly because if she doesn’t, I will throw myself on the floor like a two-year-old and have a tantrum.

Christmas brings out the baby in me.

Anyway, I’m not here to talk about Christmas. I’m here to talk about raspberries! Sweet, tart, juicy red raspberries.

I buy them as often as possible and always plan to bake with them. Then I end up standing over the sink, rinsing them one by one, and popping them in my mouth. I don’t rinse them all at once, because I’m in denial that I’m going to actually eat the whole package.  

Denial, it’s a beautiful thing. 

But, you guys! Look! I managed to set aside enough of my berries to bake with and holy heck, these rich chocolate bars, studded with juicy berries, are so perfect for summer. The sweet chocolate, the tart berries, the sugar cookie crumble, and the flaky pie crust ... I’m in love. Think my mama will make me this for Christmas instead of the usual pie?

Grab yourself some berries, condensed milk, chocolate chips, sugar cookie dough, and pie crust. That’s all you need. Ain’t life grand?

First, you’re just going to unroll the pie crust and place it in a foil lined 9x13-inch pan. Trim it up to fit and place the trimmings where needed to fully cover the bottom of the pan.

Now comes the extra good part. Pour some sweetened condensed milk into a sauce pan and set it over low heat. Stir in a cup of dark chocolate chips until everything is melty, chocolate perfection. You definitely want to use dark chocolate even if you’re a milk chocolate fan, because the condensed milk will sweeten up the chocolate considerably.

Pour the chocolate sauce over the pie crust, top with berries, and then crumble a bit of the cookie dough over the top. Do recipes even get easier than this? No.

Bake everything up and when it’s about two minutes away from being done, sprinkle on some more chocolate chips. I’ve used dark chocolate chips, but you can use any type of chocolate chip that you prefer.
