    Ingredients

    • 2 cups instant brown or white rice
    • 3 tablespoons olive oil
    • 1/2 to 1 yellow, white or red onion, chopped
    • 2 cloves garlic, chopped
    • 1/2 cup chopped carrots
    • 1/2 cup chopped sundried tomatoes
    • 1 large bunch roughly chopped spinach leaves
    • 8  eggs
    • salt and pepper to taste

    Directions

    1. 1Prepare instant rice as directed.
    2. 2Heat olive oil in a large skillet over medium heat. Add onions and garlic and saute until golden, about 5 minutes.
    3. 3Add carrots, sundried tomatoes and 1 tablespoon water and saute until carrots are slightly tender, about 5 minutes.
    4. 4Add spinach and cook down slightly. Cover until spinach is wilted, about 2 minutes.
    5. 5Using the back of a spoon, make depressions in the mixture around the edges of the pan. Crack an egg in each depression and cover until eggs are poached, about 3-5 minutes.
    6. 6Serve egg mixture over rice and sprinkle with salt and pepper to taste.
