I love burgers, but sometimes I want a vegetarian option.
I have explored many veggie burger varieties, but haven't found one I like. This falafel burger
, on the other hand, is pretty fantastic and feels like you are eating a burger. The chickpeas have a meaty quality to them and are packed with protein too!
First, make a quick tzatziki with yogurt, cucumbers, parsley, garlic, and vinegar.
I like to mash up the chickpeas instead of using a food processor so they retain some texture.
This is my desired final texture.
A quick shallow fry and they are ready to go!
