Goat Cheese-Stuffed Burgers

Stuffed burgers are as easy as 1-2-3! This easy version uses flavorful basil and garlic goat cheese in the center of ground chicken or turkey burgers.

Ingredients

  • 1 1/4 lb ground chicken or turkey
  • Sea salt and ground pepper
  • 4 tsp basil and garlic goat cheese, divided
  • 4 hamburger buns

Steps

    Using a knife, cut the ground chicken or turkey into four even quarters. Pat each quarter of meat down into a 1/4-inch thick patty.

    Sprinkle each patty with sea salt and pepper. Place a teaspoon of goat cheese into the center of each patty.

    Working with one patty at a time, fold the meat around the cheese and then pat gently into a burger shape. Press down with your thumb in the center of each. Place on a waxed paper-lined plate.

    Cook the Goat Cheese-Stuffed Burgers for 5-7 minutes per side on a hot grill, until cooked through.

    Serve immediately on a hamburger bun.

More About This Recipe

  • Although I had planned to grill all winter this year, Mother Nature had different plans for us. The Northeast – particularly my area of Connecticut – was buried in snow and ice from the end of December until early March. Not blanketed. Buried.

    So grilling? It totally didn’t happen. Even when the snow melted, we held off with it. Why? Well, when feet and feet of snow melt you are left with soggy, muddy ground. Flooding. Damage. It’s taken us the better part of a month and a half to resurrect our property and get everything – including a collapsed shed -- ready for spring. The grill was the last project, one that we got to this weekend.

    Oh, how happy am I to have our grill back in use!

    Naturally, if it’s grilling time then it’s also burger time. And my new favorite burger is Goat Cheese-Stuffed Burgers.

    Start with either ground chicken or turkey and then you season it with salt and pepper and stuff it with basil and garlic goat cheese. Once it’s all cooked, there is a thin layer of goat cheese inside … along with a ton of flavor.

    The secret to making great turkey and chicken burgers is to handle the meat as little as possible. There’s no kneading, ball-forming or anything of the like here. Instead, you cut the ground chicken or turkey into quarters and pat-pat it down to a thinner patty, which you then season.

    Place the dollop of goat cheese in the center and gently pat-pat the ground chicken or turkey around the cheese and into a patty shape.

    Finally, you grill them up. You’ll want to cook these babies all the way through, since they are poultry. Serve them on a soft hamburger bun with your favorite ketchup and lettuce, if you like it.

    Easy peasy – and ready in under 30 minutes. Perfect, right?
