How ya doin' on that eating-healthier-in-2012 thing? Here's new inspiration in a super fresh chicken salad recipe!
Eating healthier can be a challenge. You've gotta think differently -- and make changes in how you cook.
But at the end of the day, it comes down to buying healthful ingredients and finding fresh easy ways to mix 'em up.
This Orange Chicken Salad
recipe is really fun. It's great as a side salad, but it really shines as a light meal, too. I hope you're inspired to make this salad tonight
-- and keep that promise you made to yourself!
Slice 'n Scoop
Buy a big ol' orange. Fresh and juicy, but firm. Cut 'er in half and skim your sharp knife around the perimeter to loosen the orange sections.
You're doing this grapefruit-style, not like you'd typically peel an orange. Use a spoon to get the orange sections out.
Chop the orange sections into bite-sized pieces and hang on to the orange bowls -- we're gonna use those in just a bit.
Chop up some rotisserie or leftover chicken and walnuts.
Grab some dried cherries (or cranberries -- but cherries are plumper and so yum).
Mmmmix it Up
Mix all that together with a bit of fat-free ranch salad dressing.
Now That's a Salad!
Layer lettuce and spinach on a plate, then place an orange bowl in the center. Scoop some of the chicken salad mixture into the orange bowl.
Top with grated cheese and wooo-eee -- that there's what we call a Quick Dish inspiration for the new year!
Add a couple fresh-outta-the-oven Pillsbury garlic breadsticks to round out the plates. Sprinkle freshly grated pepper over your salad, or serve a small portion of the fat-free ranch dressing on the side for dipping the greens.
