Orange Chicken Salad

Fresh orange, chicken, walnuts and dried cherries combine with non-fat ranch dressing in this pretty, tasty and filling salad.

Ingredients

large firm, fresh orange
1/2
cup cooked chicken, cubed
1/2
cup walnuts, coarsely chopped
1/2
cup dried cherries (or cranberries)
1/4
cup fat-free ranch dressing (more for dipping, if desired)

to 1 1/2 cups loose iceberg lettuce pieces
1
to 1 1/2 cups loose spinach leaves
grated cheese for garnish, if desired
freshly ground pepper for garnish, if desired

Directions

  • 1 Wash orange and cut horizontally (like a grapefruit). Use a sharp paring knife to separate the orange segments from the outside, then use a spoon to scoop the orange sections out. Repeat on second orange half. Set orange shells aside.
  • 2 Chop orange segments into bite-size pieces. Combine orange pieces, chicken chunks, walnuts and dried cherries in a large bowl. Add ranch dressing and stir to combine and coat all with dressing.
  • 3 Arrange lettuce and spinach leaves on two plates. Scoop chicken salad into each orange shell, mounding to fit as much as possible. (Reserve extra salad for seconds or leftovers.)
  • 4 Garnish with grated cheese and freshly ground pepper. Serve with extra dressing on the side for the greens.

Eating healthier can be a challenge. You've gotta think differently -- and make changes in how you cook.

But at the end of the day, it comes down to buying healthful ingredients and finding fresh easy ways to mix 'em up.

This Orange Chicken Salad recipe is really fun. It's great as a side salad, but it really shines as a light meal, too. I hope you're inspired to make this salad tonight -- and keep that promise you made to yourself!

Slice 'n Scoop


Buy a big ol' orange. Fresh and juicy, but firm. Cut 'er in half and skim your sharp knife around the perimeter to loosen the orange sections.

Orange Sections

You're doing this grapefruit-style, not like you'd typically peel an orange. Use a spoon to get the orange sections out.

Chop the orange sections into bite-sized pieces and hang on to the orange bowls -- we're gonna use those in just a bit.

Chop up some rotisserie or leftover chicken and walnuts.

Serving Suggestions
