This peach bellini recipe is basically bubbly booze poured over a sweet peach puree. The Italian version of a mimosa is easy like (late) Sunday morning.

Ingredients

  • 2 medium sized peaches, peeled and diced
  • 1/2 cup water
  • 1 teaspoon lemon juice
  • Pinch of sugar
  • 1 bottle Prosecco, champagne or dry sparkling wine

Steps

    Puree peaches, water, lemon juice and sugar in a blender until smooth.
  • 2
    Fill a champagne flute a quarter full of the puree and then top off with Prosecco, champagne or sparkling wine.

  • You probably first encountered the peach bellini at brunch and thought it was a mimosa. However, they are two distinct drinks. What makes a bellini different from a mimosa? While the drinks are similar, a mimosa is made with orange juice while a traditional bellini contains peach puree. Orange or peach, a champagne punch recipe is always a good idea but you have to know how to open the bottle first.
