    Ingredients

    • 2 sticks (1 cup) butter (see directions below for softening)
    • red food coloring gel
    • 1 pouch Betty Crocker sugar cookie mix
    • 2 cups powdered sugar
    • 2 cups semi-sweet chocolate chips

    Directions

    2. 2Soften hard butter in microwave at HALF power for 30 seconds just until slightly soft, not at all melted. With a hand mixer, beat the butter just until smooth, being careful not to over-soften it. Using a toothpick, add the food color gel one dab at a time, mixing after each, until the desired pink color is achieved.
    3. 3Add the dry cookie mix (do NOT add the other ingredients called for on the cookie mix package). Add the powdered sugar. Beat only until the ingredients are fully incorporated. Dough will be crumbly, not smooth. Stir in the chocolate chips by hand.
    4. 4Drop dough by rounded tablespoon onto ungreased cookie sheet. (1-1/4" cookie scoop works well too.)
    5. 5Bake in a preheated 325° F oven for 12-14 minutes. Remove from oven when cookies are slightly brown around the edges and soft but not squishy in the center.
    6. 6Cool cookies 1 - 2 minutes on the cookie sheet before removing to a cooling rack to cool completely before serving. These aren't typical chocolate chip cookies. They aren't cakey -- instead, they are super sweet, slightly crunchy and a bit chewy. A sweet treat with coffee or milk!

That IS the key... if you microwave it too much it will be too soft and melty. If you beat it too much trying to get the right color in...it might be too soft... so to be sure, stick it in the fridge for a couple minutes before you add the cookie mix and powdered sugar. I went with 1 cup of choco chips instead of 2... worked out GREAT! YUM. Thanks for the recipe.!! Simple, easy and good!

I literally just made two batches of these about an hour ago and they turnd out great! Just let the butter soften naturally by letting it sit on the counter. NO microwaving!! Mine turned out perfect. The new recipie posted looks a little more involved. This is simple and great. :]

The reason why a lot of recipes give you a time limit on mixing the dough is because in the most commonly used flour (All-Purpose flour) there is a certain amount of gluten in it. The gluten is what gives bread structure and elasticity. It also provides that little bit of chewyness to bread and, when it is baked, it helps maintain the shape. If you knead a cookie dough as you suggested, it will not have the right consistency a cookie usually has. Plus they will not be as pleasureable to consume.

If obtaining pink colored cookies is the goal- there's no reason to do anything special. Simply knead in the food coloring to the dough- you want to use a tiny bit more than normal since the color does fade slightly in the oven. Call me a purist, but this recipe just doesn't appeal as either a shortbread recipe or a chocolate chip recipe. It's a convenient hybrid imitation of both types- and not a successful one either.

    These were terrible! I baked 2 different pans thinking I did something wrong! I should have tried them first before making a double batch! So much wasted cookie dough. I will NOT be doing these again! I agree though, they tasted yummy before they were baked!

    I did what the recipe said to do and first batch came out flat! Stuck dough in fridge for next batch and the didn't spread as much and I didn't press down the cookies as said....on 3rd batch now hoping they will do better.....I think butter needs to harden up again so they wont spread

    I would suggest maybe adding an egg. I followed the recipe to the letter and mine did not hold up well. The edges melted out and got crispy. The only thing I could think of is that the betty crocker sugar cookie package calls for an egg and this doesn't, so maybe the lack of an egg kept it from binding properly.
