Rainbow Cake Roll

A bright and colorful rainbow cake roll filled with a whipped rainbow chip frosting filling.

Ingredients

Betty Crocker™ SuperMoist™ White Cake mix

cup sour cream
1/4
cup water

cup vegetable oil

teaspoon each red, orange, yellow, green, blue and purple Betty Crocker™ gel food color

cup powdered sugar

container Betty Crocker™ Rich & Creamy rainbow chip frosting

cups frozen whipped topping, thawed

packages (2.2 oz each) Betty Crocker™ Candy Shop decors rainbow chips, if desired

Directions

  • 1 Heat oven to 350ºF. Line two 15x10x1-inch pans with cooking parchment paper.
  • 2 In large bowl, beat eggs with electric mixer on high speed until thick and lemon-colored, about 6 minutes. Add cake mix, sour cream, water and oil. Beat on low speed 30 seconds, then on medium speed 1 minute.
  • 3 Divide batter into 6 small bowls, about 3/4 cup batter per bowl. Add red, orange, yellow, green, blue and purple gel food colors, one to each bowl; mix. Pour each colored batter into a decorating bag or resealable food-storage plastic bag, and cut one corner off each bag. Starting with purple batter, carefully squeeze a thin diagonal line of colored batter onto each pan; repeating with blue, green, yellow, orange and red to make a rainbow-striped pattern. Continue until all batter has been used and pans are equally filled.
  • 4 Bake 8 to 10 minutes or until top springs back when touched. Meanwhile, sprinkle powdered sugar over two clean kitchen towels. Remove cakes from oven. Run metal spatula around edges of pans; carefully turn one on to each kitchen towel. Peel away parchment paper. Immediately roll up cake and towel from narrow end. Allow cakes to cool 30 minutes.
  • 5 In medium bowl, mix frosting and whipped topping. Mix in decors
  • 6 Carefully unroll cakes; spread half of the filling over each cake. Roll cakes up into logs; refrigerate at least 1 hour before serving. Cut into slices to serve. Store covered in refrigerator.

These rainbow cake rolls are quick and easy to make and will really add a pop of color to your event, whether it’s a birthday party or another special occasion.

Oh, and they’re easy to serve too! Just slice and plate and all your party guests will enjoy a festive swirl of cake filled with rainbow chip frosting. What's more colorful than that?

To make the cakes, you'll need to line two 9x13 baking pans with parchment paper or non-stick tin foil. Then make the cake batter and divide it into 6 bowls.

Use Betty Crocker™ Gel Colors to color individual bowls of batter purple, blue, green, yellow, orange and red.

Pour the batter into disposable pastry bags or large zip-top bags.

Snip the tip off the bags and begin piping really thin layers of colored stripes at an angle across one pan.

Start with a purple stripe, and then add blue, green, yellow, orange, and red. Continue until you fill each pan.

Bake the cakes for about 10 minutes, until the cakes spring back when touched. Remove and set each cake over the top of a kitchen towel that has been lightly dusted with powdered sugar.

Un-mold cake and peel off parchment paper.

Immediately roll cake (along with towel) into a roll and let sit for 30 minutes.

Meanwhile, mix together the Betty Crocker™ Rainbow Chip frosting along with the whipped topping. For an extra boost of color and a bit of candy crunch, stir in one or two bags of Betty Crocker™ Candy Shop Decors Rainbow Chips.

When cakes are ready, carefully unroll. Spread half of the frosting over top of each cake.

Re-roll cakes and allow them to cool for at least 30 minutes before serving.

Tips  

Expert Tips

When adding stripes of cake batter, it's ok to leave small spaces in between colors, as batter will fill in during baking.

For better control with cake batter, be sure to cut small opening on end of each resealable bag.
