Rainbow Ice Cream

Ingredients

  • 1 large tub of vanilla ice cream (you will need 18 scoops of ice cream)
  • 6 tubes gel food coloring (purple, blue, green, yellow, orange, red)
  • 1 can whipped cream (for clouds)

    Line a loaf pan with plastic wrap. This will help immensely with getting the ice cream out of the pan without having to put it into a warm water bath which will make the ice cream melt.

    Take three scoops of ice cream and put them in a small bowl. Add a few drops of food coloring gel (the more you add the more intense the color). Mix until the ice cream is colored and the gel is fully incorporated.

    Start with the violet (purple) layer. Spread as evenly as possible into the bottom of the prepared pan. Place into freezer while you prepare the next color.

    Repeat this process with every color going violet, blue, green, yellow, orange, and red. When you reach the red layer top with more plastic wrap and set in the freezer for four hours or overnight.

    To remove the ice cream start to lift on the plastic wrap. If need be you might have to turn it over and tap it out a little onto a cutting board.

    Slice the ice cream loaf.

    Using a cookie cutter, cut out the rainbows.

    Add some whipped cream clouds and serve.
