Roast Beef, Roasted Red Pepper and Goat Cheese Panini

This toasty grilled panini is stuffed with roast beef, red pepper, and goat cheese. The best sandwich you'll ever have!

Ingredients

  • 2 (3-inch) slices ciabatta bread
  • 2 tablespoons softened goat cheese
  • 6 slices roast beef
  • 1 cup arugula
  • 1/2 roasted red pepper, cut into strips
  • 1 tablespoon oil

Steps

  • 1
    Brush the oil over an indoor or outdoor grill and heat to medium-high.

    Spread most of the goat cheese along the bottom half of the bun. Top with roast beef, arugula, red pepper, and the rest of the goat cheese on top.

    Place the panino on the grill and using a cast iron skillet, or something else really heavy, press down the sandwich. Grill for 4 minutes.

    Flip the sandwich over, press with heavy object and grill another 4 minutes, or until you get good grilled marks and the cheese has melted. Slice and serve!

I also don't think it gets any grillier than this. I also don't think it gets any CAN SOMEBODY SHUT HER OFF. Aaaah, the panino. Did you know that panino is actually singular for panini? It is! Panini is the plural form of panino. Which is another way of saying that the singular form of panini is panino. Which is what I just said, sorry. You can call it paninOMG for all I care, because that's all you'll be able to utter at even a SNIFF of this sandwich tower. And the taste? PaninIDIE. Let's make it! This is so simple and quick, you can still binge-watch your favorite show while you make it. Gather some good crusty bread, sliced roast beef, roasted red peppers from a jar, goat cheese (YES) and arugula.
  • Now, you can do this on the outdoor grill and get some sun. OR, if you're scared of it (the grill, not the sun. well, both. sort of. not really. maybe) just use your indoor grill. I went the indoor route. And then grab something SUPER heavy (like a cast iron skillet or a Metallica cd) and press that sammich down. THIS. Is so good. You just can't understand it. The goat cheese gets all melty and spready and it's just so perfect with roast beef, peppers and arugula. I'm almost mad, it's that good. And the BREAD. I used a huge ciabatta loaf and sliced it into 4 equal sections. I just love the texture and taste and the crunchy outside once it's grilled and the soft insides all cozy with the goat cheese. Ugh. And these will make you dance because you can change out the fillings to be whatever you fancy! Different greens, different cheeses, different meats, different wigs. Oh wait, that's something else. Get your paninoioioio on!
