If solo cooking feels like a chore, that just means you haven’t met this simple shrimp stir-fry yet. Cleverly using a few pre-cooked ingredients, you can have a satisfying weeknight meal ready in 10 short minutes.

Ingredients

  • 1 teaspoon olive oil
  • 1 clove garlic, minced
  • 1 cup coleslaw mix (found in the bagged salad section)
  • 1/3 cup bean sprouts
  • 2 tablespoons water
  • 4 oz cooked large shrimp (peeled and deveined)
  • 1 cup cooked white rice
  • 2 tablespoons low-sodium soy sauce
  • Fresh cilantro to garnish

Steps

    Heat olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute, until fragrant.

    Stir in the coleslaw mix and bean sprouts. Add the water and cover. Cook for 3 minutes.

    Uncover the skillet and stir in the shrimp. Drizzle with soy sauce and toss to coat.

    Plate the rice and spoon the vegetable and shrimp mixture over. Garnish with cilantro, and serve immediately.

    Save time by purchasing microwavable rice, found in the freezer-section of your grocery store.

    Frozen shrimp is an easy weeknight protein if you know how to handle it. Look for peeled and deveined shrimp. Thaw in a colander set inside a bowl under cold running water 10 to 15 minutes or until fully thawed. Then pat dry and cook as directed.
