Slow-Cooker Meatball Soup

Ingredients

Meatballs:

  • 1 1/4 lbs ground turkey
  • 1 large egg
  • 1 cup Italian seasoned bread crumbs
  • 1/2 cup grated parmesan cheese
  • Salt and pepper

Soup:

  • 2 cups chopped kale
  • 1 large potato, diced (about 1 lb)
  • 2 large carrots, sliced
  • 8 cups Progresso No Salt Chicken Broth
  • 1/2 cup white wine
  • Salt and pepper, to taste

Steps

    Combine the meatball ingredients in a large bowl, mixing well with your hands. Set aside.

    In the bowl of a large slow cooker, combine the kale, potato, carrots, broth and white wine.

    Roll the turkey into 1-inch balls and place carefully into the slow cooker (try not to let them touch!). Season the slow cooker with salt and pepper.

    Cook on low for 8-10 hours or on high for 4-5 hours.
