3 Life-Saving Slice-and-Bake Cookies (You Can Thank Us Later)

When you’re a from-scratch-only baker but you’re tempted by the convenience of shortcut cookies, these no-cookie-mix cookies are the solution to the struggle. First, all three cookies are made from scratch and second, they can all be rolled and stored in the fridge for a few days or in the freezer for a month. They’re perfect for impromptu parties or when unexpected (read: uninvited) guests stop by!

One of the most common questions we receive around the holidays come from people who are asking for tips to make Christmas cookies ahead of time, how to freeze cookie dough and how to save time during one of the busiest times of the year. While a cookie mix is one of the obvious recommended solutions for a quick headstart, we know that making cookies from scratch is a non-negotiable for some. So we worked with our kitchen experts to come up with three from-scratch Christmas cookie recipes that could be kept in the freezer for a month. Each recipe has a dough that can be made in a few minutes from pantry staples; then the dough can be rolled into two logs, wrapped and placed in the freezer for when you need it.
