Avocado Toast, Three Ways

Just a trend? Maybe. So delicious we don’t care? Definitely. When it comes to this millennial standby, we can’t stop, and we won’t stop. Here are three of our favorite ways to top our toast.

If you’re the type who prefers a savory breakfast to a sweet one, then avocado toast is the dish for you. That’s not to say that avocado toast needs to be restricted to breakfast only! With a few upgrades, this standard dish can be enjoyed as a nutritional lunch, a wholesome snack and even a filling dinner. Grab a ripe avocado and your favorite bread, and let’s get toasting.

Ingredients: Basil pesto, eggs, butter, avocado, bread, salt and pepper, and optional green onions and tomatoes.

Directions:

  1. Mash up a ripe avocado in a small bowl. Season with a little salt and pepper.
  2. Toast a piece of bread, then slather in the mashed avocado.
  3. Put a spoonful of basil pesto on top of the avocado.
  4. Heat a pan on medium-high and melt a pat of butter. Crack an egg and cover with a lid, steaming the tops. Cook for about 3-4 minutes until the whites are no longer opaque and are set on top.
  5. Top each slice of avocado and pesto slathered toast with a fried egg. Season with a little salt, pepper, and sliced green onions and fresh tomatoes, if desired.

Avocado Toast with Egg Salad, Bacon and Arugula

Ingredients: Eggs, mayonnaise, mustard, avocado, bread, arugula, cooked bacon, salt and pepper, and other optional egg salad ingredients such as onions, celery, lemon juice or hot sauce.

Directions:

  1. Bring a pot of water to boil, add eggs and boil for 10 minutes. Once hard-boiled, submerge the eggs in an ice bath—this is a hassle-free way to remove egg shells!
  2. Peel the hard-boiled eggs and mash them together with a tablespoon of mayo and a squirt of mustard in a small bowl. Add any other egg salad ingredients you enjoy, like chopped onions, celery, lemon juice, relish or hot sauce, for example.
  3. Toast the bread, mash the avocado, then add the avocado to the toast with a sprinkle of salt and pepper.
  4. Top the toast with a few leaves of fresh arugula.
  5. Lay one slice of cooked bacon on top of the arugula and finish with a dollop of egg salad.

Ingredients: Fresh basil, mozzarella cheese, tomatoes, avocado, bread, salt and pepper.

Directions:

  1. Toast the bread, mash the avocado, then add the avocado to the toast with a sprinkle of salt and pepper.
  2. Top the toast with fresh basil, mozzarella and a few slices of vine-ripe tomatoes.
  3. Finish with a sprinkling of sea salt and some pepper.
