Back-to-School Breakfast

Today is my 5 year old's first day of school. He is so excited to be a kindergartener! He has been in preschool for two years but this is going to be his first time going to school five days a week, all day long (kindergarten here is full day). I want to make sure I send him to school with a tummy full of healthy breakfast so he can last the day.

It is going to be fun to come up with our own first day of school traditions. I asked some of my friends with older kids if they had any food traditions for the first day of school. The answers I got were things like: baking cookies, pancakes for breakfast, fondue for dessert, leaving notes in their lunch box.

My son loves muffins. They are one of his absolute favorite treats for breakfast and for snacks. Last night I made him these Sweet Potato Carrot Muffins for a back-to-school treat. They're loaded with all sorts of good-for-you ingredients: sweet potatoes, carrots, apple sauce, flax seed, and whole wheat flour. Not only are they healthy, they are also delicious!

I realize not everyone has time to make a special breakfast before school, and definitely not every day. It's time consuming and sometimes you are pressed just to get out the door in time. That's why I've included instructions for how to freeze these muffins, just in case you'd like to make a double batch ahead of time and stash them in the freezer for those busy mornings.

But, even I am not that organized all the time! For on-the-go eating on the really busy days we rely on healthy packaged foods to get us out the door. Some of our favorites are Yoplait Greek Yogurt and Lärabars (for me!) and Yoplait Simply Go-Gurt and Cheerios (for the kids).
