Easter Pancakes

Brunch will blow your guests away when you make these Easter pancakes that make the most of the holiday!


The holiday is just around the corner and I don’t know about you, but I’m pretty pumped for brunch already. Every year, we gather with family for a big feast to celebrate the season and the arrival of spring, complete with classic breakfast items like bacon, eggs ... and pancakes, natch.

Of course, the last thing I want to do on Easter morning is spend all of it in the kitchen, so when it’s time to make the pancakes, I use my trusty Bisquick to get the job done at lightning speed. It’s a little trick my Dad taught me, since he’s been the Resident Pancake Maker in our household for years and years.

He brings the big yellow box everywhere, from camping to vacation, and he uses it for everything, from biscuits to crepes. So this year, I’m going to take on the task myself by making these fun and festive pancakes with Bisquick baking mix:

1. Bunny Butt Pancakes


Let’s start with the Bunny Butt Pancakes, shall we? Pinterest has been quite abuzz with this idea, so I decided to try it out with Bisquick and see what all the fuss is about. Turns out they’re just as delicious as they are adorable.

 



First, measure out all of your ingredients. We’ll be using Bisquick baking mix, milk, eggs, whipped cream (or heavy cream whipped to stiff peaks with a little bit of sugar, if you want to make your own), sliced strawberries and chocolate chips. You can also get out your metal egg-shaped cookie cutter, if you want perfectly shaped bunny “feet,” but it’s not necessary.

 



Stir together the pancake batter ingredients in a bowl until just combined (remember not to overstir -- a few lumps are OK).

 



Pour the batter onto a hot greased griddle or skillet -- four large circles for the bums and eight smaller, egg-shaped pancakes for the feet.

 



Cook both sides until golden (if you want to use the egg-shaped cookie cutter, be sure to grease it before each use; pour the batter into the cookie cutter, let the batter set and then remove the cookie cutter before flipping).

 



Place the pancakes on plates in a “bunny butt” formation. Dollop a little whipped cream in the center of the large pancake for the tail, then decorate the feet with fresh strawberry slices and chocolate chips. Aren’t they just THE CUTEST? It’s almost too cute to eat! Almost.

 

2. Easter Rainbow Pancakes


And finally, let’s rainbow-fy our Bisquick breakfast, shall we? These Easter Rainbow Pancakes are shaped into cute Easter characters, like eggs and bunnies and flowers. I can just smell spring around the corner, can’t you? And it smells like delicious pancakes.

 



Round up your ingredients for this recipe, including those Easter-themed metal cookie cutters (make sure they are metal, otherwise you’ll have a melty mess on your hands and your griddle).

 



Make a batch of pancake batter, then divide it into fourths and drop a few drops of food coloring into each bowl; stir to combine. I left my colors pretty pastel-y for the spring, but feel free to make them as vibrant as you want.

 



Place the greased cookie cutters on a hot greased griddle or skillet, then pour batter into the cookie cutters.

 



Cook until edges are dry and bubbles begin to form on top, then remove the cookie cutters and flip the pancakes; cook until golden.

 



Arrange the pancakes on serving plates with all the colors of the rainbow, then sprinkle with some powdered sugar for extra prettiness, if desired.

 



There you have it, friends! An Easter brunch made simpler, festive-r, delicious-er, all thanks to Bisquick pancakes.

3. Easter Egg Pancakes


Moving along! Time to make the Easter Egg Pancakes. I love making these because if you’ve got a large family -- especially one with wee ones -- this is a fun way to bring everyone together to decorate their own edible eggs.

 



Gather all of your ingredients and toppings of your choice -- chocolate chips, dried fruits, sprinkles, whipped cream and frosting work really well, but go crazy with it!

 



Make the pancake batter and pour the batter in egg shapes onto a hot greased griddle or skillet (you can also use that metal egg-shaped cookie cutter, greased before each use, for perfectly uniform egg pancakes). If you want to add mixins to the pancakes, now’s the time to do so! Cook until golden brown.

 



When pancakes have cooled slightly, decorate them however you please. Mmm, sprinkles and chocolate chips and frosting, oh my!
