Muffins as big as your head!

Skip the thunderdome-esque parking lot situation and bake up a batch of giant, two-hands-needed muffins—in all those famous Costco™ flavors—right at home.

You know what I’m talking about. There you are, pushing the cart all nonchalant-like past the sectional sofas, six-foot teddy bears and tables of cargo shorts, when you see them: those giant, glorious packs of muffins. Two for $6.99 (and usually on sale to boot). Muffins the size of your hands. The size of your head. The size of your heart.

If all this sounds familiar, I have some really good (potentially dangerous) news for you. We hit the kitch and figured out how to hack a copycat version of this recipe at home.

This recipe starts with a base formula with cake mix and pudding, so you can change up the flavors however you please and make as many kinds of muffins as your heart desires. Because really, why choose one? A few favorite combos:

Copycat Costco™ Blueberry Muffins

White cake mix + vanilla pudding + 1 cup wild blueberries  GET RECIPE >>

Copycat Costco™ Apple Crumb Muffins

Spice cake mix + butterscotch pudding + 1 cup apple pie filling. (Top with streusel, if you like.)  GET RECIPE >>

Copycat Costco™ Almond Poppy Muffins

White cake mix + white chocolate pudding + 1 teaspoon almond extract + 1 tablespoon poppy seeds  GET RECIPE >>

Copycat Costco™ Double Chocolate Muffins

Chocolate cake mix + chocolate pudding + 1 cup chocolate chips.  GET RECIPE >>

See? One mix, endless possibilities.

Match a cake mix to a pudding flavor, stir in some stir-ins, and voila. Big old breakfast muffins. Speaking of…

Just How Big Are These Muffins, Really?

Diagram for doubters above. These babies are big. Tres big.

Tips + Tricks for You!

Stir in a lot of stir-ins. Like, fill your batter full. As long as the stir-ins are mostly dry (frozen berries, chocolate chips, etc.), the batter will hold up just fine. And your muffins will be so chock full of happy, you’ll think it’s party time.

Another secret? Just before baking, toss a few extra stir-ins right on top of your muffins. This batter is quite thick and holds up nicely to toppings. So sprinkle some chocolate chips right up top your chocolate muffins. Or extra blueberries on your blueberry muffin. Or extra poppyseeds on your…oh, never mind. You get it.

And one of the best purchases you will ever buy to ensure your muffins be the size of a bear: parchment lotus cups. Order them online, hit the baking aisle of your local crafterie (that’s blog speak for craft store). And BUY LOTUS PARCHMENT CUPS. They hold the batter in extra-nice, so these babies can bake up extra big.

Since we’re giving away secrets here, one more insider scoop. Because I know you’re wondering about the actual texture of these muffins. Like: are they really all that?

Yes, dear darlings. And more. Just begging for you skip the warehouse visit and bake up a few batches of your very own.
