Most times of the year when my alarm goes off at 6:15 a.m., I groggily pull myself out of bed and head to the office (yes, folks, my office is a mere 25-step commute). But for a few weary weeks every winter, the temperatures dip so low at night that my wake up is delayed at least an hour until I can convince my body to exit the warmth of my cushy bed. When I do, I wrap myself in my warmest, fluffiest robe.
I won't lie. On days like that, it is hard to take that robe off. Seriously. The shock of the cold air just seems too much until the sun is high in the sky. Brr.
We're at the tail-end of some frigid weeks now. Gosh, it's been rough.
Weeks like this demand a belly filling (and sometimes warming!) sandwich for lunch. It's a season when we need something hearty. Think about it. In summer, we crave light, breezy dishes that don't weigh us down ... but in winter, that fillingness can be exactly what our bodies crave.
What sandwiches do you love in wintertime? I am a big panini fan, personally. They are super easy to make at home and the toasty goodness is perfect for cold days. Don't worry if you don't have a fancy panini press though - a George Foreman Grill is essentially the same thing.
