More About This Recipe

  • Sometimes all you want is a simple, easy meal for dinner … something packed with veggies. But it’s got to be satisfying and flavorful too. (Yes, I speak from experience … that’s typically what I want for dinner -- though I think my family would revolt if I served dinner salads nightly).

I’ve been picking and digging through the Tablespoon recipes to find the perfect 10 dinner salads, including a new one I developed and adore. Enjoy!

    1. Chicken Italiano Dinner Salad

If you are going to eat a salad as a meal it needs to feel like a meal, and this one does. Mesclun lettuce is topped with warm chicken, smooth fresh mozzarella, sweet roasted red peppers and crunchy almonds. Modeled after a favorite sandwich, this salad is filling and satisfying.

    2. Easy Club Salad

A club sandwich in a bowl? Yes, please! This simple salad combines chicken, bacon and hardboiled eggs in a fabulous, delicious salad.

    3. Chef’s Pasta Salad

The great thing about pasta salad is that it’s filling, and this one, which has ham and cheese added, sounds like an awesome dinner-ized take on the traditional chef’s salad.

    4. Greek Salad

Greek salad is always a winner for me. I love the combination of briny olives, salty feta and veggies. This one is extra special with two kinds of olives. If you want to make it a little more hearty, add some chopped chicken.

    5. Turkey Taco Layered Salad

Who doesn’t love a good taco salad? This one uses cubed turkey in place of ground beef. And with the salsa-based dressing and veggie-packed recipe, it’s sure to be awesome.

    6. Gyro Salad

No, poultry isn’t the only protein that can make a salad hearty. This fabulous salad uses sirloin steak in the flavorful salad based on the popular Greek sandwich.

    7. Sesame Noodle Salad

Sesame noodles are a favorite Asian dish in my house. This salad recipe adds veggies into the mix and only takes about 25 minutes to whip together. Speed and flavor? Sounds perfect.

    8. Simple Quinoa Salad

Quinoa is a whole grain that is reminiscent of couscous. This recipe mixes the slightly crunchy quinoa with avocado chunks and tomatoes, as well as a light, sweet dressing. It’s easy and light … and sometimes that’s all you want for dinner.

    9. Tossed Steak Salad with Spicy Garlic Dressing

What? Salads have to be boring? Plain? Un-manly? This is a serious salad with man-appeal. Spicy garlic dressing? Oh, yes please.

    10. Grilled Chicken Kabob Caesar Salad

No salad list can be complete without the requisite Caesar. And this one is extra-special, with chicken kabobs on top. YUM!
