Chocolate Cookie Sandwiches with Rainbow Chip Frosting

These cookies pay homage to the classic chocolate sandwich cookie, but are made even better with Rainbow Chip frosting in the middle! MORE + LESS -

Ingredients

pouch Betty Crocker™ sugar cookie mix
3
tablespoons unsweetened baking cocoa
1/2
cup unsalted butter, melted

egg

container Betty Crocker™ Rich & Creamy frosting rainbow chip

    Heat oven to 350° F. Line 2 cookie sheets with cooking parchment paper; set aside.

    In medium bowl, beat cookie mix and cocoa. Add melted butter and egg; mix until soft pale brown dough forms.

    On lightly floured surface, roll dough 1/4 inch thick. Use 1 1/2-inch round cutter to cut out circles for cookie sandwiches. Place 1 inch apart on cookie sheets.

    Bake 8 minutes; transfer to cooling rack to cool completely.

    Use offset spatula or butter knife to spread a dollop of frosting on flat side of one cookie. Press another cookie on frosting, flat sides together, to make a sandwich. Repeat to use remaining cookies.

Expert Tips

  • If you don’t have a 1 1/2-inch round cookie cutter, you can use an upside-down shot glass or top of an empty bottle!
  • If dough is too soft to work with and starts sticking to your rolling pin, transfer to freezer 5 minutes to allow it to firm up. Alternatively, you can also roll out the dough between two pieces of waxed or cooking parchment paper.
