Easy French Toast, Banoffee-Style

Nothing beats the sizzling sound of French toast on the griddle early on a Sunday morning. But you know us—we can never leave good enough alone. We took our go-to easy French toast recipe and gave it a banana-toffee twist. This decadent breakfast is so delish, it doesn’t even need maple syrup.

Ingredients

Sweetened Whipped Cream

  • 3/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla

French Toast

  • 2 eggs
  • 1/2 cup heavy whipping cream
  • 1 tablespoon packed brown sugar
  • 1/4 teaspoon vanilla
  • 8 slices (1 inch thick) French bread

Toppings

  • 2 firm medium bananas, cut into 1/4-inch slices (about 2 cups)
  • 1/2 cup caramel-flavored topping
  • 4 teaspoons shaved semisweet chocolate baking bar (about 1/4 oz)

    In chilled medium bowl, beat Sweetened Whipped Cream ingredients with electric mixer on medium-high speed until stiff peaks form. Cover and refrigerate until ready to use.

    Heat griddle or skillet over medium heat (350°F). (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush griddle with vegetable oil or shortening if necessary. In medium bowl, beat eggs, 1/2 cup whipping cream, the brown sugar and 1/4 teaspoon vanilla with whisk until well mixed. Pour into shallow bowl.

    Dip 1 side of bread slice into egg mixture, soak 5 to 10 seconds. Turn slice over and repeat dipping and soaking. Drain excess egg mixture back into bowl. Place dipped bread slices onto hot griddle. Repeat with remaining bread slices and egg mixture. Cook about 1 to 2 minutes on each side or until golden brown.

    Divide French toast among 4 plates; top each with 1/3 cup sweetened whipped cream, about 1/2 cup sliced bananas, 2 tablespoons caramel topping and 1 teaspoon shaved chocolate. Serve warm.

    If you’re running low on heavy whipping cream, you can replace the 1/2 cup heavy whipping cream with half-and-half in the egg mixture.
  • tip 2
    Want to keep your French toast warm while you finish making the whole batch? Place a cooling rack on a cookie sheet, then line with French toast. Move it to the oven and keep warm at 200ºF.
  • tip 3
    To make shaved chocolate for this recipe, we used a 56% cacao semisweet chocolate baking bar. Use a vegetable peeler to shave curly pieces of chocolate.
  • tip 4
    Make the sweetened whipped cream before you start on the French toast. That way, you’ll be ready to top while your French toast is nice and warm.
