Ingredients

  • 1 red pepper
  • 2 eggs
  • Salt and pepper

Steps

    Preheat oven to 400°F. Slice the red pepper into 3/4-inch thick slices. Lay the two largest slices on a baking sheet lined with parchment paper. Save the remaining red pepper slices for another recipe.

    Crack an egg in the center of each of the red pepper slices. Salt and pepper to taste.

    Bake in preheated oven for 7-9 minutes, or until the whites of the eggs are fully cooked, and the center yolks are cooked to your preference.
