Line 8x4- or 9x5-inch pan with foil or cooking parchment paper. Spray foil with cooking spray. In large bowl, place granola; set aside. In food processor, add dates, candied ginger and 1 tablespoon water; pulse in 1-second bursts about 30 seconds or until finely chopped. Scrape as needed. Add oats, peanut butter, brown rice syrup and ginger; process until mixture comes together into a ball.
