Gluten Free No-Bake Ginger-Peanut Bites

Spicy ginger and peanut butter make these granola and date bars flavorful and delicious. MORE + LESS -

Ingredients

cup Gluten Free Chex™ Granola Mix Honey Nut
1/2
cup pitted dates, packed
1/4
cup finely chopped candied ginger
1
tablespoon water
1/2
cup quick-cooking oats
1/4
cup peanut butter

tablespoons brown rice syrup or honey
1/4
teaspoon ground ginger

    Line 8x4- or 9x5-inch pan with foil or cooking parchment paper. Spray foil with cooking spray. In large bowl, place granola; set aside. In food processor, add dates, candied ginger and 1 tablespoon water; pulse in 1-second bursts about 30 seconds or until finely chopped. Scrape as needed. Add oats, peanut butter, brown rice syrup and ginger; process until mixture comes together into a ball.

    Transfer date mixture to bowl of granola. Lightly spray hands with cooking spray; use hands to blend mixture. Use palm of hand and fingers to very firmly press mixture evenly into pan, pressing down to compact mixture until firm.

    Refrigerate about 1 hour or until firm enough to cut. For squares, cut into 3 rows by 6 rows. Store covered in refrigerator up to 1 week.

Expert Tips

Substitute 1/2 cup chopped pitted dried figs for the dates.

Be sure to use fresh, soft dates for this recipe. If not available, soak dates in 2 tablespoons boiling water 15 minutes to rehydrate.
