Greek Grilled Chicken Tacos

MARINADE:

cup Greek yogurt (marinade)

SALSA:

tomatoes
1/2
English cucumber
1/4
onion
Salt and pepper

clove garlic

TZATZIKI SAUCE:

cup Yoplait® Greek plain yogurt
1/4
cup minced onion
1/4
cup minced cucumber
1
clove garlic (grated)
Salt and pepper

lemon

    Dice prep and mix the salsa ingredients together. Dice prep and combine the tzatzkiki ingredients. Dice prep and combine the marinade ingredients.

    Mix the chicken into the marinade and allow to sit for an hour. Meanwhile, slice the onion into thin rounds.

    Grill the onion until browned. Remove from the grill. Grill the chicken until fully cooked, about 25 minutes on low. Remove from the grill. Grill the tortillas just to brown slightly before building your tacos.

    Start with a tortilla, add some chicken, then grilled onion, then feta, followed by salsa and finally, tzatziki.

  • You've never had a taco like this! Souvlaki chicken topped with lots of freshness and tzatziki sauce makes one yum of a bite.

    A nicely made chicken souvlaki is one of the best flavor combinations around, and these souvlaki-style tacos are a fun way to get all the things you love about Greek food concentrated into a few perfect bites. 

    All the different components come together really quickly, and you can have these on the table in no time. So switch up taco night this week and make these instead!

    I love using boneless skinless chicken thighs for this recipe because with the yogurt marinade they just come out so juicy and succulent, but feel free to substitute some chopped up chicken breasts if that's what you prefer.

    Just chop up a couple ingredients to make the salsa.

    Same with the tzatziki. Let these hang out in the fridge while the chicken marinates.

    Grill up the chicken, then give it a rough chop. I do this on my flat grill pan, so I chop it right up in the pan.  If you are grilling outside, just toss them onto a cutting board after they are cooked.

    Before serving, lightly grill the tortillas to get some color on them.
