Herb-Roasted Chicken and Potatoes

Sunday dinner taste on a Monday night schedule! This super easy, crazy flavorful one-pan dinner is most accurately described as “the bomb.”

Ingredients

  • 5-6 boneless, skinless chicken breasts
  • 1 1/2 lb small red-skinned potatoes
  • 1/2 cup Progresso™ chicken broth
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh tarragon, chopped
  • 2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 tablespoons smoked paprika
  • 4 cloves garlic, minced
  • 4 tablespoons fresh lemon juice

Steps

    Preheat the oven to 400°F. Line a large rimmed baking sheet with aluminum foil.

    In a large mixing bowl, combine all ingredients and toss until well coated. Transfer to the prepared baking sheet.

    Bake for 30 minutes, or until chicken is cooked through and potatoes are tender.

    Serve the chicken with the potatoes. Drizzle with the pan juices.

    The smaller your potatoes, the better they’ll work in this recipe, because they cook through quickly, no chopping required. If your potatoes are on the larger side, you’ll want to halve or quarter them so they’ll cook faster.
