Jalapeño and Chorizo Cheese Dip

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup white onion, finely diced
  • 1/2 lb fresh Mexican chorizo
  • 1/2 whole jalapeño, finely chopped
  • 2 cups mozzarella cheese, grated
  • 2 cups Monterey Jack cheese, grated
  • 1 whole jalapeño, sliced for garnishing

    Heat the oil in a skillet over medium heat and add the diced onion. Sauté for five to six minutes.

    Next, remove the skin from the chorizo before placing in the skillet. Continue cooking the mixture while using a fork to ‘break-up’ the pieces of chorizo. Then mix-in the chopped jalapeño.

    After two minutes have passed, stir in the cheese. Cook for an additional two minutes or until the cheese has melted. Transfer your finished dip to a serving dish and garnish with the jalapeño slices. Serve hot alongside your favorite tortilla chips.

    If you prefer a dip that’s not spicy, you can prepare this recipe without the jalapeños. To garnish, use diced tomatoes and cilantro instead.
