A sweet, herb-packed marinade for pork tenderloin! MORE + LESS -

Ingredients

pounds pork tenderloin
1/2
cup light rum
1
lime, juice only
1
tablespoon sugar
1/4
cup fresh mint leaves
1
teaspoon kosher salt

    Add pork tenderloin to a large plastic bag. In a bowl, stir together rum, lime juice, sugar, chopped mint leaves and salt.

    Pour marinade over pork and let marinate for at least an hour.

    Remove pork from marinade and grill over medium-high heat for 6-8 minutes per side, until pork reaches an internal temperature of 145ºF.
  • 4
    Remove pork from grill, wrap with foil and let rest for 10 minutes. Then slice pork into coins and serve while warm.
