Quinoa Mixed Green Salad

Quinoa is high in protein, low in fat and cooks quickly--a perfect ingredient to toss in this citrus-flavored salad. MORE + LESS -

Ingredients

cup cooked quinoa

tray peas and corn in a basil butter sauce (from 17-oz package)

teaspoon grated lemon peel

tablespoons fresh lemon juice

tablespoon olive oil
1/4
teaspoon salt

cups spring salad greens

clementines or 1 medium orange, peeled and sectioned
1
cup chopped sweet red bell pepper (1 medium)

    Cook quinoa as directed on package. Cool; set aside.

    Cook tray of peas & corn in microwave as directed on package; cool.
  • 3
    In small bowl, mix lemon peel, lemon juice, olive oil and salt; set aside.
  • 4
    In medium bowl, mix salad greens, clementine sections, bell pepper, cooked quinoa and peas & corn. Add lemon juice mixture; toss to combine.

Expert Tips

  • To make ahead, combine the salad ingredients, and toss with the dressing just before serving.
  • Change up the flavor of this salad by using orange peel and orange juice in place of the lemon.
