Ingredients

large orange-fleshed sweet potato, peeled (about 1 lb)

tablespoon cornstarch

tablespoon vegetable oil
1
tablespoon Old El Paso™ original taco seasoning mix (from 1-oz package)

cup shredded Cheddar cheese (3 oz)

medium avocado, pitted, peeled and diced
1
tablespoon finely chopped red onion

teaspoons fresh lime juice
2
tablespoons chopped fresh cilantro leaves

tablespoons roasted pepitas

    Heat oven to 425°F. Line 18x13-inch rimmed pan with foil; spray with cooking spray.

    Cut sweet potato crosswise into 1/4-inch slices (about 16). In medium bowl, toss potatoes with cornstarch until completely coated. Drizzle with oil; stir to coat. Sprinkle with taco seasoning mix; place in single layer on pan.

    Bake 15 minutes; turn, bake 10 to 15 minutes longer or until browned. Remove from oven; top each slice with Cheddar cheese. Return to oven 1 to 2 minutes or until cheese is melted.

    Meanwhile, in small bowl, coarsely mash avocado with fork; stir to chunky texture. Add red onion, lime juice, cilantro and salt; stir to combine.

    To serve, top each potato slice with slightly less than a tablespoon guacamole; garnish with jalapeño chile and pepitas.

Expert Tips

  • Sweet potatoes vary in size and shape. The number of slices could vary, but the guacamole topping should not have to be adjusted.
  • Craving even more toppings? Try a little sour cream or fresh cilantro.
  • To dice the avocado, cut in half, and remove pit. Using large spoon, scoop flesh from skin. Place one half avocado, cut side down, on cutting board. Make two horizontal cuts to make three planks, then cut lengthwise into strips. Turn 90 degrees, and cut again. Repeat with other half of avocado.
  • Roasted pepitas—a type of pumpkin seed—can be found with the nuts at the grocery store.
