Island flavors--macadamia nuts, coconut, and dried tropical fruits--provide an exciting change for basic oatmeal cookies. MORE + LESS -

Ingredients

cup sugar

cup firmly packed brown sugar

cup butter, softened

cup coconut

(3.25-oz.) jar macadamia nuts, coarsely chopped (about 2/3 cup)

(7-oz.) pkg. diced dried tropical fruits and raisins

    Heat oven to 375°F. Spray cookie sheets with nonstick cooking spray. In large bowl, combine sugar, brown sugar and butter; beat until light and fluffy. Add vanilla and eggs; blend well. Add flour and baking soda; mix well. Stir in oats, coconut, nuts and dried fruits.

    Drop dough by rounded tablespoonfuls 2 inches apart onto sprayed cookie sheets.

    Bake at 375°F. for 7 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.

Expert Tips

Diced dried fruit is convenient for recipes. The packaged mixture we used in this recipe contained golden raisins, pineapple, papaya, apricots and mango.

Coconut dries when it's exposed to air; seal an opened package of coconut in an airtight container or plastic bag and keep it refrigerated for up to six months.

Try coarsely chopped walnuts in place of the macadamia nuts.
