Vegetable Chili Skillet Supper

Ingredients

tablespoon olive or vegetable oil
1/2
cup chopped onion

(1-lb.) pkg. frozen broccoli florets, carrots and cauliflower
1
(8-oz.) can tomato sauce
1
teaspoon chili powder
1/2
teaspoon sugar
1/4
teaspoon salt
1/8
to 1/4 teaspoon ground red pepper (cayenne)
1
(15 1/2-oz.) can pinto beans, drained
4
oz. (1 cup) shredded Cheddar cheese

    Heat oil in large skillet over medium-high heat until hot. Add onion and frozen vegetables; cook and stir 7 to 10 minutes or until vegetables are crisp-tender.

    Add tomato sauce, chili powder, sugar, salt and ground red pepper. Bring to a boil. Reduce heat to low; simmer 5 minutes.

    Add beans; simmer an additional 5 minutes or until thoroughly heated. Sprinkle with cheese.
