tablespoons extra-virgin olive oil
ounce white button mushrooms, lightly rinsed and sliced
10.2 ounce tube Pillsbury™ refrigerated biscuits (5 biscuits)
tablespoons (or more if needed) hoisin sauce
carrot, thinly shaven
red bell pepper, thinly sliced
small handful of mint and cilantro leaves, and diced scallions
small pinch coarse salt

    Preheat oven to 350°F.

    Heat the oil in a large sauté pan. Add the sliced mushrooms and sauté until brown and tender, about 4 minutes. Season with a small pinch of salt.

    On a floured work surface, roll out each biscuit until you get roughly a 6-inch circle. Brush each one with a tablespoon of hoisin sauce. Evenly top with sautéed mushrooms, carrot ribbons and sliced red bell pepper. Place on a lightly coated baking sheet, and bake 15 to 17 minutes, or until the dough is cooked through.

    Garnish each pizza with mint, cilantro and sliced scallions.

  • The story about when I was out of cheese.

    Let's say you're out of cheese. Which we both know that would never ever happen in a kazillion years, but WHAT. IF. you were? What do you do? How do you eat? How do you live? How does your heart go on?

    Well, I'm here to tell you a story of survival. A story in which, without the support of my friends and family, I might not be here today to share with you the travesty of what I went through. A HOUSE WITH NO CHEESE.

    It's called, Veggie Asian Biscuit Pizzas to zee resceeeeew. (I know it's rescue.)

    A simple doo wap ditty doo of Pillsbury biscuits, some silky hoisin sauce, sautéed mushrooms and some fresh veggies and herbs. All in pizza form. You know it gives me giddy pants.

    Let's rock! (what?) Grab a can of Pillsbury Grands biscuits, some hoisin sauce, half a red bell, a carrot, some button mushrooms, and fresh herbs. (I used cilantro, mint and scallions.)

    While your oven is preheating, get the 'shrooms all sautéed and purty.

    And also get that carrot shaved into ribbons. And the red bell pepper sliced. And the scallions sliced. AND! AND!

    It's so easy, just roll out each biscuit into roughly a 6-inch circle. Mine had little butter flecks in them. Omg.

    Now, brush each round with hoisin sauce, and top it all with some awesome mushrooms, carrots and bells! Into the oven they go, and  . . .

    You might need to have the mercy. 

    All of them. All of the mercies.
