- The nori sheet acts as a firm yet sticky skin for wrapping the sushi roll. It becomes sticky once it comes in contact with moisture. For best results, buy sheets just before you need to use them and keep them in a dry location or they will not stick well.
- There are two kinds of bamboo sushi mats; one kind has two rounded sides, the other kind has one rounded side and one flat side. The rolling mat with one flat side is easier to use, and delivers better results.
