Egg In a Pepper

Breakfast can be fun and healthy with this simple idea. Serve it up with a side of Fiber One™ pancakes and you've got a nutritious, delicious meal!

red pepper

eggs
Salt and pepper

Directions

  • 1 Preheat oven to 400°F. Slice the red pepper into 3/4-inch thick slices. Lay the two largest slices on a baking sheet lined with parchment paper. Save the remaining red pepper slices for another recipe.
  • 2 Crack an egg in the center of each of the red pepper slices. Salt and pepper to taste.
  • 3 Bake in preheated oven for 7-9 minutes, or until the whites of the eggs are fully cooked, and the center yolks are cooked to your preference.

Eggs are always a nice way to wake up, but serve them baked inside red pepper slices and suddenly you've got the coolest darned breakfast ever.


This breakfast is so simple to make, you'll hardly believe it. Here's how to bake up a hearty (and pretty!) morning meal right in your own kitchen…

Slice a red pepper into two thick slices, in the center of the pepper. The slices should be about 3/4" thick. Place your slices onto a parchment lined baking sheet and break an egg into the center of each.

Bake in an oven preheated to 400 degrees.

While your eggs are baking, grab a box of FiberOne pancake mix. Stir it up according to package directions, then cook on a griddle until golden brown.
