Grilled Georgia Peaches and Ice Cream

Luscious, juicy, cool and creamy -- what a perfect summertime dessert!

Ingredients

4
Ripe but firm Georgia peaches
1/4
cup dark brown sugar
2
teaspoons vanilla
Vanilla bean ice cream

Directions

  • 1 Clean grill grate and preheat grill to high.
  • 2 Wash and quarter peaches, leaving skin on and removing pits. In a large bowl, toss peach quarters, brown sugar and vanilla until all peaches are coated. Let sit 15 minutes until coating is caramely. Toss again to coat evenly.
  • 3 Place peach slices on grill, skin side up. Cook for 3-4 minutes, reducing heat as necessary to avoid burning. Turn peaches (still skin side up) to cook the other fleshy side for another 3-4 minutes, or until grill marks are visible and peaches are cooked.
  • 4 Remove peaches from grill to a plate and cool before adding to ice cream. Serve with a large scoop of vanilla bean ice cream surrounded by 4 grilled peach slices. Garnish as desired (whipped cream, mint sprig, etc.).

Grill 'em Up

Quarter 4 ripe but firm Georgia peaches and remove the pits. (If the peaches are overly ripe, they'll mush up on the grill.) In a bowl, add dark brown sugar and vanilla to the peaches. Toss them to coat and set aside for 15 minutes.

Preheat the grill to high and clean the grate with a brush. Stir the peaches in the bowl again, making sure all pieces are covered with the caramely coating.

Add peaches to the grill, skin side up, and cook 3 or 4 minutes. Reduce heat if necessary so they don't burn.

How to Grill Peaches

Flip to the other fleshy side (still skin side up), and cook another 3 minutes.
