Bacon. Bacon bacon bacon bacon.
You could wrap a shoe in bacon and it would be magnificent.
But today we're going with chicken. But that's not the whole story. The bacon is brushed with a super simple honey and sriracha glaze.
Goodness gracious. It's just so good! It's spicy and sweet. The chicken is nice and moist due to cooking INSIDE A STRIP OF BACON.
This is such good news.
Let's just make it!
First of all, take your bacon and cut each strip into thirds. And give your chicken a nice little dice. Like 1-inch cubes. That'll do.
Then place each chicken cube in the center of the bacon strip. Wrap the bacon around each cube and seal with a wooden toothpick.
Make your glaze! Seriously, it's just honey and sriracha sauce. I made a small amount at first, and then ended up needing more. That's why it looks like I have a thimble of sauce.
Brush brush brush!
Oh good grief. This is about 45 minutes later, right out of the oven, and right into my face. The bacon is so crispy and the glaze is just ridiculously perfect.
Heaven's gonna need to help us.
