Cook diced onions, celery, and carrots in a hot skillet until soft and tender.
Toss two cans of cooked chicken into the veggies. Stir in some buffalo sauce.
Grab a box of Bisquick. Prepare thyself for goodness. Beat it together with some milk and eggs.
Spoon a bit of your Bisquick mixture into a muffin tin. I lined mine with cupcake wrappers, but you can just spray a plain old muffin tin with some nonstick baking spray.
